Tortellini Carbonara - This Will Make You Look Like a Pro!

The only things that take time are boiling the water and chopping up the bacon and green onions. I've slightly altered this from a recipe in Southern Livings Ultimate Quick and Easy Cookbook. This cookbook is a must have for anyone who doesn't have much time to cook or who needs easy, fool-proof recipes.

1 - 18 oz. bag of cheese filled tortellini (refrigerate if you want it to cook in 2 minutes)
8 slices bacon cut up into small pieces.
2 tablespoons minced garlic (buy a jar at the store) or 2 cloves fresh (I'm lazy an used the minced. Use less if it's a strongly flavored batch.)
2/3 cup shredded Parmesan Cheese plus extra for putting over the top
1/2 cup whipping cream
2 green onions thinly sliced (book's recipe called for 1 tablespoon minced fresh parsley)
pepper to taste (the cheese and bacon tend to have plenty of salt so I do not have to add any)

Cook tortellini according to directions on package. Drain and set aside.

Place some olive oil (a quick splash around the pan) in a skillet or the pan you cooked the tortellini in. Add in garlic and cook for 30 seconds.

Add tortellini to pan. Add in bacon, green onions, whipping cream, pepper and Parmesan. Let the cream heat up and begin melting the Parmesan. If it seems thick, add some more cream (a little at a time).

Put it in a pretty bowl and add some Parmesan to the top. This dish is amazing. I made it for a group of 10 the other Sunday. I cooked the bacon that morning before church and prepped the rest of the meal in under 30 minutes after we got home.
